Alpha Acids determine the potential for bittering. Higher alpha acid content will provide higher IBU (International Bittering Units) when boiled for an extended period of time.

Beta Acids content is less important for the brewer but does indicate "storability" or how well a hop will maintain its bittering capability over time.

Hops need to be stored in a cool place. Hops are specially packaged under nitrogen and placed in packaging that prevents oxygen or light exposure. Once a package is opened it should be used immediately.
